Chef Lionel Rigolet: An intense ganache made with dark chocolate from Vietnam (80%) infused with ginger and enriched with pieces of candied ginger, enrobed with dark chocolate and white chocolate powder.
Chef Thierry Theys: A silky hazelnut praliné made with roasted hazelnut oil, intense milk chocolate 46% and Dulcey chocolate 32%, enrobed with dark chocolate and a blend of milk chocolate and passion fruit powder.
Chef Peter Goossens: A velvety pecan nut praliné made with pieces of caramelised pecan nuts and enriched with sea salt from Guerande, enrobed with dark chocolate and raspberry powder.
Chef Tim Boury: A delicate ganache of Caramelia chocolate with caramel from Isigny and infused with caramel vinegar, enrobed with dark chocolate and Muscovado sugar.
Chef Yves Mattagne: A voluptuous hazelnut praliné made with gianduja bianco en milk chocolate from Venezuela 42%, enrobed with dark chocolate and feuilletine.
